Introduction

This cookie turns out moist and yummy. A combo of Oatmeal, raisins, and banana. You can subsitute or add chocolate chips. You can divide this into three 8x8 baking pans. Ingredients

    2 cups flour
    1 tsp. cinnamon
    1/4 tsp. nutmeg
    1 1/2 tsp salt (I omitted this, I tasted the batter and seemed salty enough)
    1 tsp. baking powder
    1/4 tsp. baking soda
    1 cup sugar
    1 cup soft shortenint or butter
    1 cup mashed bananas (2 or 3)
    2 eggs
    2 cups uncooked oatmeal
    1 cup raisins or chocolate chips

Directions

Beat sugar, shortening, mashed banans abd eggs until smooth. Beat in flour, spices, salt, baking powder, soda into the sugar mixtire. Fold in rolled oats and chocolate chips or raisins. You may decide the dough into 3 parts

Bar cookies: spread 1/3 of dough in a well greased 8" square pan. Bake at 375 degrees for 15 to 20 minutes. Let stand 10 minutes, then cut into bars and roll in confectioners sugar while still warm. Do the same with the other two one thirds. I baked it in one retangular pan, 8 x 13 for 25 to 30 minutes. It makes it more calories a piece though, your getting thicker pieces, but not as many servings.

servings depends on the size pan you use and the size of pieces you cut to get your number of servings.

Drop cookies: drop into a well greased cookie sheet. Bake at 375 for 10 to 12 minutes.

Rolled Cookies: Refrigerate dough overnight. Sprinkle board with powdered sugar. Roll 1/3 of dough at a time to 1/4" thinkness. Cut into 2" circles or fancy shaoes. Bake at 350 degrees for 8 to 10 minutes
