Number of Servings: 8

Ingredients

    3 Tbsp butter
    1 green onion, finely chopped
    2 Tbsp red bell pepper, finely chopped
    1 clove garlic, minced
    3 Tbsp heavy cream
    1 Tbsp Dijon Musard
    2 tsp Cayenne Pepper
    3/4 cup bread crumbs
    1 large egg
    1/2 tsp fresh minced parsley
    1 pound blue crab meat, picked free of any bits of shell
    1/4 cup grated Parmesan Cheese
    2 Tbsp vegetable oil
    Lemon Dill Sauce (see following recie)
    1 cup Mayonnaise
    1/4 cup buttermilk
    2 Tbsp chopped fresh dill
    1 Tbsp minced fresh parsley
    1 Tbsp grated lemon zest
    2 tsp fresh lemon juice
    1 small garlic clove, minced

Directions

1. Melt 1 Tbsp butter in a heavy skillet over medium heat.
2. Add onion, red bell pepper & garlic. Cook 3 minutes.
3. Add cream, mustard, and cayanne. Mix well.
4. Add 1/2 cup bread crumbs, egg, and parsley. Mix well.
5. Gently fold in crabmeat.
6. Form into 8 patties.
7. Mix remaining bread crumbs & parmesan cheese in a bowl.
8. Pat this topping onto the patties.
9. Refrigerate patties for 2 hours or place in freezzer for 30 mins.
10. Make dill sauce by combining all ingredients & stir well.
11. Refrigerate until chilled.
12. Combine oil & 2 Tbsp butter in a skillet.
13. Cook crab cakes over medium heat for about 3 minutes per side, or unitl golden brown. OR, place them on a baking sheet, drizzle with oil & butter mixture, and bake at 400 degrees for 7 - 10 minutes, turning once.
14. Spoon a dollop of the Lemon Dill Sauce alongside each crab cake & serve remaining sauce separately.
