Ingredients

    Mist casserole pan with Olive Oil.
    Layer slices of eggplant, sprinkle garlic powder, oregano, and black pepper, bits of mozzarella cheese, basil, spinach leaves and marinara sauce. Repeat layers 4 high. Top and smother with marinara sauce. Cover with foil. Bake for 40min at 375 degrees. Uncover. Bake for another 20-30 minutes at 350 degrees until eggplant is cooked all the way through.
