Introduction

Ingredients

4 boneless, skinless chicken breasts
3/4 tsp salt
1/8 fresh ground pepper
4 tsp extra virgin olive oil
1 zucchini, halved lengthwise and cut into slices
1 red bell pepper, seeded and cut into this slices
1 cup chunky salsa
2 Tbs fresh chopped cilantro
Directions
1. Preheat oven to 425 degrees. sprinkle chicken with 1/4 tsp of salt and 1/8 tsp of pepper.
Heat 2 tsp oil in skillet. Add chicken and cook until lightly browned on each side. Transfer chicken to plate.
2. Heat remaining 2 tsp of oil in same skillet. Add zucchini, bell pepper, and salt and pepper; cook until slightly softened, about 3 minutes.
3. Tear off 4 sheets of foil. Place 1 chicken breast in center; top each with 1/2 cup vegetables and 1/4 cup salsa. Fold each piece into a packet, making a tight seal and allowing room for the packets to expand.
4. Transfer packets to a baking sheet. Bake until the chicken is cooked throught. At least 15 minutes.
5. Sprinkle with cilantro to serve.
