Ingredients

2 crowns of brocolli, rinsed and diced, stalk too
2-3 garlic cloves
1 medium white or yellow onion
chicken broth fat free about 20ozs
2 cups of fat free half and half
salt and pepper
Directions
Pour one can of chicken broth into a large pot and bring to a boil. Add chopped onion, minced garlic and brocolli to the pot. Cover and simmer for 15-20 minutes. Taking a blender, blend the ingredients for several minutes on high. I like it a little chunky, so if you want it smooth, blend longer. Now add the cream, salt and pepper to taste and the rest of the chicken broth. Warm back to a hot temperature and serve. This is great to freeze in single servings or to eat over several days.
