Introduction

A yummy and easy stew for the slow cooker. Add Sriracha hot sauce, salt and pepper and a dash of red wine for extra flavour.

Ingredients

    BASE
    1 large can of chopped stewed tomatoes
    1 can of chickpeas
    1 large yellow onion
    2 cups water
    .25 cup olive oil
    2 tbsp honey
    1 tbsp Sriracha hot sauce
    heaping tbsp. chopped garlic
    italiano seasoning (to taste)
    salt/pepper (to taste)
    dash of red wine

    VEGGIES
    2 large carrots
    1 large zucchini
    1 large yam
    2 medium potatoes


Directions

Preheat oven to 350 F

Combine base ingredients in slow cooker and set on high. Onion should be chopped and allowed to cook in the base for more flavour.

Meanwhile, chop veggies into 1" cubes, pealing the carrots, and place on a greased baking sheet. drizzle a bit more olive oil over all and sprinkle with more italiano seasoning. Roast the veggies in the oven for approx. 20-25 minutes or until edges are crispie.

add to slow cooker and allow to cook for approx 1-2 hours or until onions are fully cooked.
