Ingredients

~Cook 1-pound of tenderloin. You will only use 6oz, however.
~4 cups lettuce
~1 cup torn mint leaves
~0.25 cup minced red onion
~1 diced cucumber
~juice of 2 limes
~1Tbsp soy sauce
~1/8tsp cayenne pepper
~1Tbsp water
Directions
Cook tenderloin ahead of time so that this meal is easily prepared.
Toss 4 cups lettuce with 1 cup mint leaves, onion, and cucumber.
Whisk together lime juice, soy sauce, cayenne pepper and water.
Thinly slice tenderloin and add its juices to the dressing. Serve meat over salad drizzled with dressing.
