Bran Muffins made with Applesauce, Ground Flax Seed, Wheat Bran, Raisins, Walnuts and Olive Oil for a Heart Healthy Muffin with 3 grams of Fiber. Ingredients

1 cup wheat bran
1 1/2 whole grain wheat flour
2 tbsp ground flax meal
1 tsp baking powder
1 tsp baking soda
5 packets of splenda
2/3 cup raisins
2/3 cup chopped walnuts
1 cup non fat milk
1/2 cup molasses
3/4 cup unsweetened applesauce
2 tbsp olive oil
1/3 cup water
Directions
Yields 20 moist muffins. Bake for 15 minutes at 400 degrees. Preheat oven.
In a large mixing bowl, combine all dry ingredients, then mix in walnuts and raisins.
In a separate bowl, stir in applesauce, milk, molasses, oil and water. Add to dry ingredients and stir just until moistened and mixed well.
Spoon into greased muffin tins or paper muffin cups. Bake 15 to 20 minutes.
Honey may be substituted for molasses. Any nuts may be used instead of walnuts. This recipe does not use eggs as the ground flax seed meal and water are used instead of eggs.
