Ingredients

    Mashed Potatoes:
    2 lbs golden potatoes
    1 cup chicken broth
    1 tsp salt

    Meat:
    1 large onion
    1 bulb garlic, chopped
    2 Tbsp olive oil

    2 lbs lean ground beef (9%) or ground turkey
    1 tsp salt
    1 cup chicken broth
    1.5 Tbsp cornstarch

    12 oz package frozen mixed vegetables (corn, green beans, julienne carrots)


Directions

Cube and boil potatoes until soft. Mash until fluffy with 1 cup chicken broth and salt to taste. Add some garlic if you wish.

Preheat oven to 350F

Chop and saute onion and garlic with the olive oil in a large skillet (you can back off on the garlic if it's not your thing, season as you wish, I happen to love the stuff.) Add the meat and cook until browned. Let the whole thing simmer for a few minutes while you mix the cornstarch into 1-1.5 cups of chicken broth. Add the mixture to the meat and onions and stir until thickened like a good gravy.

Cook the frozen vegetables in the microwave for about 5 minutes.

Layer the meat, vegetables and mashed potatoes in a large casserole dish and pop in the oven for about 20 minutes (until the peaks of the potatoes start to get brown)

Eat lots of this, you can get away with it. Makes about 8 good-sized servings. My 5-year old asked for 6 helpings.

    I used beef broth instead of chicken broth - and I used 2 tablespoons of sour cream and about a half cup of milk in the potatoes - (mashed potatoes without milk just doesn't seem right). The sauce was great and I'll definitely be making this again! - 9/29/10

    I guess I am a rookie when it comes to thickening sauces, because it just didn't work on my end, for whatever reason. I cheated with the potatoes and bought them premade(Simply Potatoes). I used lean(7%) ground beef, but I felt that the nutritional info provided would be off, so I did my own. - 4/10/10
