Ingredients

    4 Cups beef broth
    3 Cups water
    1 Tbsp soy sauce
    6 oz beef (round steak) - cooked
    1 Tsp toasted sesame oil
    6 oz dried soba noodles
    1/2 cup scallions slivered
    1/2 cup carrots shredded
    1/2 cup fresh cilantro leaves
    4 lime wedges
    1 fresh hot red or green chili, thinly sliced, seeds removed

Directions

1. Bring a pot of water to boil over high heat

2. Meanwhile, bring broth, water, and soy sauce to a simmer in second pot over high heat. Add beef and sesame oil; reduce heat to low.

3. Add noodles to first pot of boiling water. Cook, stirring, until al dente, about 4 minutes.

4. Divide noodles into 4 large soup bowls. Ladle beef and broth mixture over noodles. Garnish with scallions, carrots, cilantro, lime and chili.
