Introduction

Simple seafood gumbo. Makes huge pot of gumbo that is great served over rice. Simple seafood gumbo. Makes huge pot of gumbo that is great served over rice.

Ingredients

    1 cup flour
    1 cup butter
    2 cups diced onion
    4 cloves minced garlic
    1 cup tomato sauce
    1/2 cup tomato paste
    Water (8 cups or so)
    3 lbs boneless, skinless chicken breast
    2 lbs cleaned shrimp
    2 lbs tilapia fillets

Directions

Place butter and flour in skillet and heat on high or medium high, stirring constantly, until dark reddish brown. Add onions and garlic and enough water to thin it out some so that the flour mixture does not scorch. Place this mixture in the pot with tomato sauce, paste & water and diced chicken. Bring to a boil. Season with salt, peper, red peper, and creole seasoning to taste. Add the shrimp and fish the last 20 minutes or so.
