Number of Servings: 8

Ingredients

    1 lb lean ground beef (Laura's Lean 8% fat)
    1/2 cup chopped onion
    1/2 cup chopped green pepper
    2 tsp minced garlic
    2 cups cooked elbow macaroni (4 oz uncooked), cooked without salt or fat
    1/2 water
    1 tbsp chili powder
    1 tsp ground cumin
    1/4 black pepper
    1 16 oz can kidney beans, drained and rinsed
    1 15 oz can diced tomatoes, no salt added
    1 8.75 oz can whole kernel corn, no salt added
    1 8 oz can tomato sauce, no salt added
    1 6 oz can tomato paste, no salt added

Directions

Cook first 4 ingredients in a Dutch oven over med-hi heat until meat is browned, stirring to crumble. Drain well, if needed. Return mixture to the pan, stir in macaroni and next 9 ingredients and bring to a boil. Reduce heat, cover and simmer for 20 minutes. You may top with cheddar cheese and sour cream, but these are not included in the nutritional counts.
