Introduction

Using leftover mashed potatoes, add a few more ingredients, cook em up, yum. Using leftover mashed potatoes, add a few more ingredients, cook em up, yum.

Ingredients

    1 Cup Mashed Potatoes
    1/4 C. chopped onions
    1/8 c. white flour
    1 large egg
    1 tsp. dried parsley (or more for fresh)
    1.4 tsp. Salt
    Pepper to taste
    Any other spices of your choice
    *Crisco Pure Vegetable Oil, 3 tbsp

Directions

Using more or less of the oil indicated (this will change your nutritional information) heat oil in pan on med-med/hi heat.

Mix all ingredients. Mixture will be a thick, batter-like consistency. Pour batter into small disk shapes in hot oil in pan. Don't overcrowd pan, allow space between each pancacke for even cooking.

Lower heat to med - med/low, cook til browned and heated through. Season additionally, as soon as you remove from the pan, if desired.

Serve with lowfat sour cream, ketchup or whatever you like.

    Thanks for submiting! This was exactly what I was looking for. I omitted the onions since my taters had onions, I used ww flour and ended up using about 1/8 t pepper. They are great if they are crispy. My kids enjoyed them with apple butter (ages 4 and 5). - 11/19/09
