Number of Servings: 12

Ingredients

    1 1/2 cups Kelloggs original all Bran extra fiber( this is stick variety... or PC Fiber First cereal)
    1 cup fat free buttermilk ( I prefer Farmers in US Blue Bunny has fat free)
    1/2 cup boiling water
    1 cup Robin Hood White Whole Wheat Flour ( in the US Hodgson Mill makes one)
    1/4 cup White Splenda
    1 tsp Baking soda
    1 tsp Baking Powder
    4 large egg whites ( I use simply egg whites so would be 1/2 cup)
    1/2 cup unsweetened Applesauce
    1 cup diced not too small fresh apple(any favorite baking apple)
    1 tsp cinnamon
    1 tsp apple pie spice ( or make your own..or extra tsp cinnamon)
    1 tsp cinnamon
    1/2 tsp nutmeg

Directions

Makes 12 Large Muffins
Spray muffin tins set aside
Preheat oven 375*
pour buttermilk over bran cereal let soak 10-15 min
Meanwhile dice apple .... beat whites in separate bowl till frothy add applesauce and splenda set aside. Pour boiling water over cereal mix in . Sift together dry ingredients in another bowl. To bran mixture add applesauce mixture and diced apples mix well. Stir in dry ingredients until all is mixed. Spoon into muffin cups and sprinkle with a cinnamon and splenda blend over tops. Bake 15-20 minutes till done. Remove to wire rack and cool.....12 muffins ...1 Weight Watcher point Each

    Great recipe! Super healthy but still delicious. I used Fiber One cereal and regular skim milk because that's what I had in the house - it worked great! I may add raisins next time. Thanks! - 5/12/10
