Ingredients

3 cups low-sodium vegetable broth
1 cup water
1 tsp. Sriracha (chili-garlic sauce)
2 Tbsp. rice vinegar, unseasoned
2 Tbsp. lite soy sauce
3 cloves garlic, minced
1 Tbsp. fresh ginger, grated
2 cups Seapoint Farms Vegetable Blend with Edamame
1 Tbsp. sesame oil
3 green onions, chopped
1 cup firm Tofu, cubed
salt substitute and black pepper, to taste
Directions
1- In a 4-qt. crockpot, add in the broth, water, Sriracha, rice vinegar, soy sauce, garlic, ginger and vegetables.
2- Cook on low for 5-7 hours.
3- Add in the tofu, and continue cooking for an hour.
3- Add in the sesame oil and green onions, and allow to combine and warm through. Serve.
