Ingredients

3 cups Cinnamon Toasters or Cinnamon Crunch Cereal
2 T. unsalted butter
8 oz. wide egg noodles
1/2 cup tart dried cherries
4 T. unsalted butter
5 large eggs
4 cups nonfat milk
1/2 cup sugar
1 tsp. ground cinnamon
1 tsp. vanilla extract
1/2 tsp. ground nutmeg
1/2 tsp. salt
Directions
Preheat oven to 350 F. Spray 7.5" x 11" glass oven-safe dish with nonfat cooking spray.
Topping
Melt 2 T. butter and cool. In small bowl, crush cereal. Drizzle butter over cereal and mix with fork to combine. Set aside.
Pudding
Arrange noodles evenly in dish. Sprinkle cherries over noodles.
Melt remaining 4 T. of butter and cool. In medium bowl, combine butter with remaining ingredients. With whisk or hand mixer, mix well.
Pour custard over noodles and cherries. Sprinkle topping evenly over custard.
Bake until custard is set, about 60 minutes.
Makes 10 pieces, about 2 inch by 3.75 inches.
