Ingredients

    Parsnips, 1 parsnip (9" long)
    Potato, raw, 6 small (1-3/4" to 2-1/2" dia.)
    Sweet potato, 1 sweetpotato, 5" long
    Butter, unsalted, 3 tbsp

Directions

Makes 8 servings

Prep:
Preheat the oven to 400 degrees
Clean the Parsnip and the potatoes, peel the sweet potato.
Dice and mix all vegetables and place in a coverable baking dish
Place the butter in dots all along the top, then cover

Bake for 1 hour
