Introduction

This is a quick, easy, convenient dinner. And my husband loves it! This is a quick, easy, convenient dinner. And my husband loves it!
Number of Servings: 6

Ingredients

    1 box Rice-A-Roni, chicken flavor
    2 T butter
    1 can rotel (diced tomatoes and green chilies)
    1 can diced tomatoes
    Tyson Grilled Chicken Breast Strips

    Optional garnish:
    Shredded cheddar cheese
    Sour Cream

Directions

Follow the directions on the back of the rice-a-roni. Melt your butter in a POT (rather than a pan). Add the rice and vermicelli. Saute until the vermicelli is golden.

Add 2 1/2 cups of water. Also add the drained rotel and diced tomatoes. Add the chicken. Bring the mixture to a boil.

Once it starts to boil, reduce the heat and simmer for 15 - 20 minutes. Once the liquid has been cooked away, you are ready to serve. I top my serving with shredding cheese and sour cream.

Substitutions I have used:
canned chicken
chicken broth instead of water
don't drain tomatoes to make is a little soupier.

    Incredible!
    Hubby and I really enjoyed this dish! Next time I make it, I will add some green pepper and onion. I am veggie challenged, and any time I can add more veg it's a good thing! Thanks for a great recipe! Oh. I also added some chicken bouillion powder, which upped the sodium, but tasted good! - 9/24/09
