Ingredients

    4 cups rolled oats
    1/2 cup chopped almonds (or any other desired nut)
    1/4 c. buckwheat groats
    1 tsp vanilla extract
    1 tsp cinnamon
    pinch salt
    1 tbsp honey (opt)
    1/2 cup fresh apple juice or apple juice not from concentrate
    1/2 cup finely chopped dried apples

Directions

Preheat oven to 350 degrees Fahrenheit.
Soak buckwheat 4-12 hours (I usually do it overnight). Drain and rinse well.
Stir together oatmeal, almonds, soaked buckwheat, cinnamon and salt, in a large bowl. In a separate bowl, whisk together honey (if desired - not included in info) and apple juice; pour over oatmeal mixture and stir to coat thoroughly.
Spread mixture in an even layer onto a 15x12-inch baking pan. Bake for 35 minutes, stirring three times during baking time.
Cool mixture in the pan before adding dried apples. Store granola in an airtight container.

Makes about 14, 1/3 cup servings.
