Ingredients

    2 frozen packages of spinach, defrosted and drained
    6 tblsp of butter, melted
    2 of the large tubs of cottage cheese
    6 large eggs
    6 tblsp of flour
    12 oz of cubed cheddar cheese
    pinch of nutmeg

Directions

defrost and drain spinach. Press with a fork if necessary to get all the water out.
In a large bowl, combine flour and cottage cheese.
In a small bowl whisk the eggs.
Stir eggs into cottage cheese mixture.
Add spinach, cheese and nutmeg.
Pour entire dish into a sprayed casserole dish and cook for one hour or until fork comes out clean.
