Introduction

Number of Servings: 20

Ingredients

    1 medium roast -cut in 2 inch cubes
    ( it doesn't have to be a specific roast. base it on your family size. this is a double batch that way we can have left overs for lunch or another dinner).

    olive oil or any cooking oil just enough to coat the skillet
    8 stalks of celery (chopped small)
    8 medium carrots (sliced thin)
    2 (pkg sliced mushrooms)
    1 medium green pepper (chopped in about nickel size pieces)
    salt and pepper to taste
    2 cloves garlic crushed
    1 small red sweet pepper

    please note this is a double batch of the beef
    it leaves enough for 2 dinners and 2 lunches for a family of 5

    1/2 cup sweet sherry or sweet vermouth or dry sherry depending on which you prefer
    1/4 cup of ketchup any brand is fine
    1/2 cup Worcestershire sauce
    you can add more of the spices or wine to your preference
    add 2 to 3 cups of water.

    2 1lb bags of egg noodles.
    this makes enough for a family of 5 to have 2 big meals.

    I like to serve this with a big salad.

    it is hard to judge exactly how many people this will feed. this recipe gives my family dinner for 2 days and 2 days of lunches as well.

    if your just cooking for a family of 4 then you can cut the recipe in half. or freeze half the beef for another night.
    I cook just enough egg noodles for the night I am serving this. if for a party I cook 2 to 3 bags of noodles to go with this. if just for my family I cook one. and freeze half the beef for another night.

Directions

first chop roast into 2 to 3 inch cubes

in a deep skillet add 1 tbsp or 2 of oil depending on how big of a roast you purchased. sear the beef. ( stir til brown on all sides). set aside beef.

I then wipe out any remaining oil from the skillet. then add the beef back.

add carrots 2 cups or about 8 sticks of carrots sliced thin

add celery 2 cups or about 8 stalks cleaned and sliced thin

add 2 pkg mushrooms sliced thin

1/2 cup sherry or sweet vermouth which ever you choose

1 onion chopped medium

1 cleaned and chopped green pepper

1 cleaned and chopped sweet red pepper

2 cloves of garlic crushed

salt about 1/4 of a teaspoon

pepper just a little to add flavor about 1/4 of a teaspoon

3 to 4 cups of water depending on how many noodles you choose to serve

1/4 cup ketchup

1/2 cup Worcestershire sauce

if the sauce smells to much like wine for your familys taste add a little more ketchup and Worcestershire.

cover and simmer 2 hours
no stirring or checking required

about 30 minutes before time is up cook the egg noodles.

pour the beef and sauce over the egg noodles and serve my family likes the sauce tossed threw the egg noodles to coat them for flavor.

you can add more vegetables if you choose. also I cut onion and peppers large enough that my son can pick them out if he chooses

you can add more wine or spices or more vegetables to your preference also it doesn't' matter which beef you buy because simmering even makes the cheapest cuts of beef fall off the fork tender.
