Blueberry muffins made with a stevia baking blend instead of sugar. Texture is a little different than muffins with sugar, but at just 77 calories each I think they're pretty good. Ingredients

6 tbs Stevia baking blend
2 tsp Baking Powder
1 tsp Baking Soda
1/2 tsp Salt
6 oz vanilla non-fat, sugar free yogurt
2/3 cup Water
3/4 cup Blueberries
Directions
Mix dry ingredients. Add yogurt, water & blueberries. Stir well. Spoon into muffin tins. Bake at 400 degrees for 15-18 minutes. Makes about 11 regular muffins, or 3x as many mini muffins.
