Introduction

The best way to make this soup is to use a store bought rotisserie chicken and strip the skin and bones out. Also, make sure to top with your favorite combination of sour cream, tortilla chips, avacado, cheese, lime, salsa and hot sauce. Ingredients

    1 rotisserie chicken, skin, bones and fat removed
    3-4 celery stalks, chopped
    3-4 medium sized carrots, chopped
    1 large sweet onion, chopped
    4-5 cloves garlic, minced
    1 can corn
    1 can black beans, rinsed
    1 (24oz) can tomatos, whole, cut into chunks
    2-4 jalapeno peppers, seeds removed, minced
    3-4 tbsp Better Than Buoillon, Chicken broth
    2 tbsp olive oil
    2.5 tsp ground cumin or to taste
    2.5 tsp ground coriander or to taste
    2-4tbsp cilantro
    10 cups water

    Optional Toppings:
    Tortilla chips
    Reduced Fat Sour Cream
    Chedder Cheese, shredded
    Avacado, sliced
    Salsa
    Hot Sauce
    Lime/Lemon Juice


Directions

Cook onions/carrots/celery in olive oil until they are soft and onions are see through. Add garlic, cook for 1 minute. Add broth, jalapenos, tomatoes w/ liquid, corn, black beans, cumin, coriander. While those are cooking (about 30-35 minutes) take the chicken flesh off of the rotisserie chicken. When broth is simmering add the chicken. Cook for about 15-20 minutes on medium. Season with salt and pepper. Add cilantro before serving. If you like it spicier you can add hot sauce/salsa while its cooking.

Use Toppings as desired on dished-out soup. They are NOT included in calorie count.
