Ingredients

    * Onions, raw, 1 large
    * Mushrooms, fresh, 2 cup
    * Garlic, 4 clove
    *Whole Wheat Flour, 0.5 cup
    *Balsamic Vinegar, 3 tbsp
    * Silk, Plain Soymilk, 1/2 cup
    thyme to taste

Directions

Cook onion on high heat for 3 minutes. Add sliced mushrooms and garlic, then cook until the mushroom begin to release their juices. Sprinkle the flour over the mushrooms. Stir continuously with whisk or wooden spoon until the flour is evenly dissolved. Add the vinegar and Silk, stirring continuously until the sauce thickens. Add the thyme to taste.

    Looks great! There's a new product called MimicCreme (check it out at www.mimiccreme.com) made from almonds and cashews that is a great "cream" substitute for this kind of recipe! I'm going to make this and sub MimicCreme for soymilk. Comes in quarts, but their site says it freezes well. - 8/23/09
