Ingredients

    1/2 cup red wine vinegar
    4 Tablespoons extra virign olive oil
    3/4 teaspoon Morton's Lite Salt
    ½ t ground black pepper
    3 cloves garlic, crushed
    3 (15-ounce) cans Earthfare organic black beans, rinsed and drained
    1 (10-ounce) package frozen cut corn, thawed
    1 large sweet red pepper, chopped
    1 medium-size green pepper, chopped
    1/2 purple onion, chopped

Directions

Combine first 5 ingredients; let stand 30 minutes for flavors to develop. Combine black beans and next 4 ingredients in a large bowl; add dressing, tossing to coat. Cover and chill 8 hours. Garnish, if desired. Yield: 10 to 12 servings.
