Ingredients

Tbsl Extra Virgin Olive Oil
1 lb bulk ot italian sausage
1 med onion chopped
3 - 4 cloves garlic
1/2 pound cremini mushrooms thinly sliced
1 baking potato diced
2 springs rosemary
3 springs thyme
sal andn pepper
1/4 cup tomato paste
4 cups chicken stock
2 cups water
1 bunch kale - thick stems removed and shred leaves
Directions
Heal large pot over med heat with one turn of the pan of extra virgin oilive oil. Once hot add the sasage and saute for 3 - 4 minutes, breaking it up. to the browned sausage, add the onion, garlic mushrooms, potato rosemare thjyme, salt pepper and the tomato paste. Cook for 3 -4 min.. Add the stock and 2 cups of water, turnm the heat up to high and bring up to a bubble. Add the lentils and the kale, stir until the kale wilts in then turn the heat down.
