Introduction

This is a "lightened up" version of a traditional favorite. I use my family's favorite spices but you can adapt the taste to suit yours. If you want to serve with fat free whipped topping feel free. This is a "lightened up" version of a traditional favorite. I use my family's favorite spices but you can adapt the taste to suit yours. If you want to serve with fat free whipped topping feel free.
Number of Servings: 8

Ingredients

    4 cups prepared sweet potato. You can use canned or fresh depending on your time limits.
    1/2 cup egg substitute
    1/2 cup soy milk
    Frozen reduced carb pie shell (or make your own from reduced fat baking mix)
    Spices to taste, cinnamon, ginger, clove, etc.
    1 tablespoon vanilla extract

Directions

Preheat oven to 425 degrees. Combine all ingredients and pour carefully into pie shell. Be careful, it will be full. Place pie pan on larger baking sheet in case of overflow during baking. Bake for 30-40 minutes or until set and browned. Start checking at 30 minutes but don't go over 45 or crust will burn.
