Ingredients

1 pound of Italian Sausage, pork, cut up in slices
1 large chopped Onion
3 medium carrots chopped
2 stalks of chopped celery
3 cloves of minced Garlic
2 cans of Beans any type
4 cups Water
1 tsp Pepper, black
3 cups of chunked Butternut Squash
2 cups Spinach, frozen,
2 Chicken bouillon
Directions
1. In dutch oven, cook sausage until brown, then cut into slices.
2. pour off fat, stir in onions cook for 10 minutes.
3.stir in carrots, garlic and celery cook 1 minute.
4. Add beans,pepper, water and bouillon.
5. reduce heat, cover and simmer for 30 minutes.
6. Stir in squash and spinach simmer on low for 25 minutes.
Serve; makes 8-2 cup servings.
