Introduction

My neighbor gave me this awesome recipe that her grandfather used to make. It used regular pork sausage and way more cheese and butter. This is my low cal version. I serve it with 1/2 cup of cannelloni beans and I add those to my calorie count separately. You could cook them in the soup though and add them into the recipe. (My boyfriend won't eat the beans.) Ingredients

    -About 1 pound Honeysuckle Italian Turkey Sausage (my pkg. had 20 ounces so the nutrition information is based on 20 ounce)
    -1 Bunch Escarole
    -1 teaspoon crushed red pepper flakes
    -1/4 cup finely minced garlic (about 15 cloves)
    -3 tbps. olive oil
    -6 cups chicken stock
    -2 cups water
    -1/2 cup parmesan cheese
    -2 tbsp. butter

Directions

Saute garlic, sausage and crushed red pepper flakes in olive oil until sausage is cooked. Add cut up escarole, chicken stock, and water. Simmer about 30 min. on low. Add parmesan cheese and butter just before serving.

Makes approx. 10- 1 cup servings.
