Number of Servings: 8

Ingredients

    1.5 obs chicken, boneless, skinless
    1 tbs olive oil
    2 cloves garlic chopped
    Chicken broth, 1 can (about 2 cups)
    Great Northern beans, 2 cans
    Cannellini Beans (white kidney), 2 cans
    Green chilis, 4 oz can, chopped
    Cumin, 2 Tbs
    Cayenne pepper, 1/4 tsp
    Salt, 1/4 tsp


Directions

Saute chicken, onion, garlic in olive oil until chicken is cooked. Add can of chicken broth and simmer for 30 minutes. Remove and shred chicken then return to pot.

Add the rest of the ingredients and simmer all together for 30 - 40 minutes, or cook low in crock pot for 4 - 6 hours.

When ready to serve, top with shredded Colby-jack and crushed Frito's.
