Introduction

(NOTE: This is a resubmission of my mom's recipe. Correcting several ingredients)

Fresh chicken is the key to this recipe but canned chicken will work in a pinch.

This was a favorite of my mother's kitchen and I share it with you in her honor.

Number of Servings: 6

Ingredients

    2 lbs low fat chicken breast, cut into small cubes
    3/4 C Hellman's lite mayonaisse
    * do not use Miracle whip or the like
    1/2 C walnuts, chopped coursely
    3 tsp tarragon
    1/2 tsp pepper
    2 Tbs EVOO

Directions

Mix mayonaisse, pepper and 2 tsp tarragon in a small bowl. Refrigerate for minimum of 2 hours. Tarragon will infuse it's flavor into the mayo the longer it chills.

Cut chicken breasts into small cubes
Add 2 Tbls olive oil to a pan and cook chicken thoroughly. Add 1 tsp tarragon for taste.

Once chicken is cooked, transfer to refridgerator to cool. You may serve this slightly warm but do not recommend hot.

Mix all ingredients into a large bowl and serve.

Makes 6 3/4 C servings
