Ingredients

    1 lb. chicken breast - cut into strips or chunks
    1.2 lb. ground turkey
    1 cup carrots - chopped
    1 cup celery - chopped
    1 medium onion - chopped
    1.25 cups brown rice
    0.5 cup ketchup
    0.5 tsp. garlic powder
    2 cups hot water
    2 jalapeno peppers, chopped (optional)
    salt & pepper to taste (the nutritional value was calculated w/o salt)

Directions

Brown sausage in large pot. Once browned, remove the sausage from the pot (leave grease in the pot). Add chicken, onions, celery, and carrots to the sausage grease and brown the chicken. Once chicken is browned, add all the ingredients to the pot (including the sausage). Stir, cover, and cook on medium low for 45-60 minutes, or until rice is cooked. Once the rice is cooked, remove from heat and let set for 10 minutes.

Makes approximately 8 1-cup servings.
