Introduction

Ingredients

Tuna, Canned in Water, 12 oz, drained
Kraft Miracle Whip Fat Free Dressing, 6 tbsp
Pickle Relish, 3 tbsp
Red Onions, raw, 1 tbsp chopped
Ground Corriander, 1 tsp
White Pepper, 1/4 tsp, ground
Pasta, whole wheat shells, 4 oz dry
Apricots, dried, 1/3 cup, diced
Spring Mix Salad, 12 cup
Light Honey Mustard Dressing, 12 tbsp
Directions
Cook pasta according to package directions.
While pasta cooks, mix Tuna through pepper in a bowl. Once pasta is done drain and rinse under cold water. Mix pasta into tuna mixture and chill in the refigerator until cold.
Place 2 cups of spring mix salad on each plate top with 1 1/2cup of tuna mixture then garnish with dried apricots. Serve with 2 tbsp of Light Honey Mustard Dressing.
You can vary this recipe quite a bit. Sometimes I garnish with golden raisins or switch out red onion for celery so it's as adaptable as most tuna salads but this is meant to be a sweeter recipe so I always use the ground corriander which compliments the sweetness.
