Ingredients

    2 Tablespoons butter or marg
    3 leeks, chopped
    2 Tablespoons flour
    4 cups chicken or veg stock
    3 medium potatoes, peeled and cubed
    1 cup low fat milk
    salt and pepper to taste

Directions

Melt butter in saucepan over medium heat. Add leeks, saute gently until soft. Stir in flour and cook for 2 minutes. Gradually stir in stock.

Add potatoes, bring to the boil, simmer gently for 30-40 minutes or until potatoes are soft. Stir in milk and seasonings.

Puree soup in a blender. Add salt and pepper to taste.

Serves 6.

    Nice soup. Mine turned out a little thin -- probably because I only had 2 cups of broth on-hand and had to use water for the rest! - 3/26/10

    Iadded 1/4 red pepper, chopped and 2 portabello mushrooms with the leeks. VERY good! - 9/9/07
