Introduction

Ingredients

    1/4 C red peppers
    1 medium zucchini
    12 cherry tomatoes
    6 mushrooms
    2 cloves of garlic
    1 oz. feta cheese
    1/4 cup red onion

Directions

Slice all veggies and put into a casserole dish. Toss with olive oil and garlic. Bake at 425 for 30 min.

Meanwhile, cook Orzo as directed on package.

Serve veggies on the orzo, sprinkle with feta.
