Ingredients

1 boneless skinless chicken breast
2 plum tomatoes, diced
5 basil leaves, julienned
1 clove garlic, chopped
1 tsp olive oil
1 oz shredded or sliced part skim mozzarella
1/2 tsp crushed red pepper flakes (or to taste)

pepper
1 slice whole wheat bread
McCormick garlic bread sprinkle (or garlic salt)
Directions
Preheat oven to 400 degrees F. Spray an oven proof dish or sheet with nonstick spray.
Pound chicken breast to 1/4 inch thickness and season both sides with salt and pepper. Grill or saute until cooked through .
Heat oil in a pan over medium heat. Saute garlic 1 minute. Add diced tomatoes and red pepper flakes and saute just until heated through, about two minutes.
Top chicken breast with tomato mixture. Sprinkle 1/2 of the basil leaves and then the mozzarella on top.
Spray both sides of bread with nonstick spray (butter flavored, if you have it) and sprinkle one side with McCormick or garlic salt.
Place on baking sheet, garlic side up.
Put chicken and bread in the oven and cook until cheese is melted and bread is toasted. Once chicken is plated, garnish with the rest of the basil leaves.
