Introduction

Ingredients

    250g cauliflower, steamed
    1 Tbs olive oil
    1 lg leek, ends trimmed, washed and finely sliced
    2 Tbs butter
    30g wholemeal flour
    3 cups skim milk
    3/4 cup shredded low fat tasty cheese
    2 tsp finely grated lemon rind
    1 tsp mustard
    415g can pink salmon, drained and flaked
    2 slices wholemeal bread, made into breadcrumbs
    2 Tbs fresh parsley, chopped


Directions

Preheat oven180C
Steam or microwave cauliflower.
Put 1/2 oil into large pan, add sliced leek and cook until softened 4 - 5 min
Remove leek from pan, add butter to pan and melt. Add flour, stir and cook 30 sec.
Remove from heat, gradually add milk, stirring all the time.
Return to heat and cook, stirring until thickened and boiling. Remove from heat
Add cheese, lemon rind, mustard and leek, stirring until combined.
Gently stir in flaked salmon and cauliflower
Turn mixture into ovenproof dish
In separate bowl cmbine breadcrumbs, parsley and 1/2 Tbs oil
Sprinkle over salmon mixture.
Cook in oven until browned and bubbling hot through
Serves 6

    The flavours were good but it came out much wetter and runnier than anticipated. I will definitely try it again and tweak it to suit our tastes better. - 5/11/09
