2 slices Jennie-O Extra Lean 95% Fat Free Turkey Bacon, chopped
2 Large Eggs, fresh
5 Egg whites
2 cups fresh Spinach
½ cup chopped Green Bell Peppers
½ cup Sweet red bell peppers
½ cup Sliced Onion
2 cloves Garlic, chopped
¼ cup Kraft Shredded 2% Mexican Four Cheese blend
2 tsp Olive Oil, Extra Virgin
1 tsp Thyme, fresh
Directions
1) Coat an 8-inch skillet with no stick cooking spray; add the Evoo.
2) Over medium heat sauté the chopped turkey bacon for a couple of minutes.
3) While the bacon is sautéing, in a medium bowl, whisk the eggs, egg whites, salt, pepper and thyme. Add the bell peppers, onion and chopped garlic. Fold in the spinach.
4) Add the egg mixture to the bacon. Sprinkle the cheese on top and bake in preheated 350°F oven for 20 minutes or until bubbly and lightly browned.
5) Remove from oven, divide into two portions and serve.
