Introduction

This is great on bread or on crackers. This is a great recipe to use if you have left over chicken in the refrigerator too! This is great on bread or on crackers. This is a great recipe to use if you have left over chicken in the refrigerator too!

Ingredients

    2 Chicken Breasts - cooked
    3 Hard Boiled Eggs
    1/2 Cup Finely Chopped Celery
    3/4 Cup Mayonnaise
    1 Tsp Salt
    1/2 Tsp Pepper

Directions

In one pot boil 2 boneless skinless breasts. In another pot boil 3 eggs. When the chicken and eggs are done, chop them up. Place them in a medium mixing bowl and add 1/2 cup of finely chopped celery. Add in the mayonnaise, salt and pepper. You can eat right away if you want it warm or refrigerate for later.

You can vary this recipe by adding chopped onion, pickle relish, or anything else you can think of. If using as a spread on crackers, I chop up the chicken and egg real fine to make an easier spread.
