Other protein can be substituted for the scallops, such as chicken, shrimp, tofu, etc. Makes a nice one dish balanced meal. Ingredients

    7 oz package rice noodles
    1 package iceberg shredded lettuce (about 3-4 c)
    1 bottle Makoto Ginger Dressing
    1/2 package shredded carrots (about 1.5 cups)
    1 pound small scallops
    1/3 cup seasoned rice vinegar

Directions

Boil rice noodles according to package directions. Drain, and use a pasta server to pick up a large spoonful of the noodles, while cutting them with a scissors with the other hand in pieces about 4 inches long. (they will clump together otherwise) Cook scallops for several minutes until done, drain. Add all other ingredients, stir well.
