They say you can use this grain in place of brown or white rice.My family loved this recipe and so did my SIL who is really a picky eater. They never new it was good for you. Ingredients

1 med. onion; diced
1 lrg red pepper; diced
1 lrg clove of garlic; minced
1 tsp olive oil
1 sweet potato; peeled & diced
3/4 c. Quinoa (raw)
2 eggs
3/4 c. skim milk
3/4 c. soy shredded cheese
salt/pepper
Directions
Heat oven 350 & spray either lrg pie plate or 1.5 qt casserole dish. Heat quinoa and 1.5 c water over med/high heat until boiling. Reduce heat and cover, simmer 15 to 20 min, or until quinoa is cooked and water is evaporated. Meanwhile, combine sweet potato (diced in small pieces) and 1/4 c. water in microwave safe dish; heat sweet potato for minutes in microwave. Saute red pepper, onion in oil for 5 min, add garlic. Cook for 5 more minutes. In a large bowl stir eggs and milk together; add quinoa, cooked veggies, sweet potato, and cheese (leave little cheese for top); stir in salt/pepper. Pour into baking dish and bake for 30 minutes; let cool for 5 minutes
