Ingredients
-
4 cups old-fashioned oatmeal
1 cup whole wheat flour
1 cup dried cranberries
1 cup chopped dates
1/2 cup firmly packed brown sugar
1/4 cup flax seeds*
1 tsp baking soda
1/2 tsp salt
1/2 cup honey
1/3 cup canola or vegetable oil
1/4 cup egg whites
*I used ground flax seeds, and that's what calculated here. I also used sea salt, but I don't know how much of a difference that makes.
Directions
Preheat oven to 325. Grease a 15x10x1 inch baking pan. In a large bowl, stir ingredients together until completely moist and coated. Firmly press mixture into prepared pan using spatula. Bake for 16-18 minutes, or until light golden brown. Let cool completely before cutting, and cut into 36 bars. Wrap individual bars tightly in plastic wrap. Store in airtight container.
--Next time I might try adding some fibersure for another extra kick of fiber, but it would probably need more liquid I would think. Worth experimenting though!
