Ingredients

    1 Tbsp olive oil
    1 onion, chopped
    2 cloves of garlic, pressed (or finely chopped)
    2 chipotle peppers in adobo sauce, chopped
    2 Tbsp adobo sauce
    1 (10 oz) can diced tomatoes
    1 Tbsp mild green chilis (or more if you like)
    2 (15 oz) cans kidney beans, drained and rinsed
    2 tsp kosher salt
    2 tsp ground cumin
    1 tsp chili powder

Directions

In a large saute pan, heat olive oil. Saute onions and garlic. Add kidney beans, chipotle peppers, adobo sauce, and tomatoes. Add the rest of the ingredients and cook just till everything looks mixed well and heated through. Serve and enjoy!
