These cookies are best made on a cool, dry, day. They spread quite a bit as they bake, forming lacy wafers. These cookies are best made on a cool, dry, day. They spread quite a bit as they bake, forming lacy wafers.

Ingredients

    1 stick (half a cup) of unsalted butter, cut into 8 pieces
    Half of a cup of firmly packed light brown sugar
    One third of a cup light corn syrup
    Half a tsp. salt
    1 cup of finely chopped walnuts, toasted
    Half a cup or all-purpose flour
    Half a cup of old-fashioned oats
    1 tsp. vanilla extract

Directions

1. Heat oven to 350 F. Grease 2 baking sheets. In medium saucepan, combine butter, brown sugar, corn syrup and salt. Bring to biol over medium-high heat, stirring constantly. Remove from heat and stir in walnuts, flour, oats, and vanilla extract.
2. Drop batter by level teaspoonfuls onto prepared sheets, spacing 3" apart. (leave 2" between dough and edges or baking sheets).
3. Bake 6-7 minutes, until golden. Cool 2 minutes on sheets or until cookies are firm enough to pick up with spatula.Place on wire racks to cool. Do NOT ovelap cookies. Repeat process until batter is finished.
