Ingredients

    3Tbs oil, heated in iron skillet while oven is preheating
    2 cups stoneground yellow cornmeal
    1/2 cup flour
    2 tsp baking powder
    1 tsp baking soda
    1 tsp salt
    2 eggs, slightly beaten
    1 3/4 cup nonfat milk

Directions

Preheat oven to 425. Place oil in iron skillet and heat in oven while preheating.

combine remaining ingredients well. when oven is hot, pour oil into the batter and mix. pour batter into the skillet and bake 25 minutes.

    We loved this recipe! I did add a couple tablespoons of sugar since there was no sweetener in it. - 4/13/09
