Introduction

The original recipe of this looked good, but by the time I was done with it, it seems to be enough of a different animal to repost. I would prefer to make it with fresh mushrooms, but I didn't have any. That will cut some of the sodium. Ingredients

    16 ounces skinless boneless chicken breast, cut bite size
    1 can 98% fat free cream of chicken soup, undiluted
    1 can 98% fat free cream of celery soup, undiluted
    1 cup diced celery, large dice
    3 medium carrots, large dice
    1 4 ounce can sliced mushrooms, drained
    1 cup broccoli chopped
    1.33 cup whole-wheat pasta (I used rotini)
    .25 cup fat free sour cream

Directions

Cut everything up to the size you like to eat. Mix soups and sour cream in the crock pot. Add chicken, mushrooms, carrots and celery. Cook on low for 4 to 6 hours. One hour before serving, add pasta and chopped broccoli. (We like our broccoli to still have some "chew" to it. You can certainly add it earlier if you like it softer. As this was cooking for the last hour, we discovered it was drying out - the pasta was soaking up all the liquid, so we added about three cups of hot water. Still came out good. Makes 6 1-cup servings.
