Ingredients

    2 cups diced cooked chicken
    1 can (10-3/4 ounces) condensed Cream of Chicken Soup, undiluted
    2 celery ribs, finely chopped
    1/2 cup mayo (reduced fat or fat free mayo is not recommended - not sure why)
    1 can (4 ounces ) mushroom stems and pieces, drained
    2 tablespoons finely chopped onions
    1/2 cup crushed butter-flavored crackers (about 12)
    1/2 cup crushed potato chips

Directions

In a large bowl,combine the chicken, soup, celery, mayonnaise, mushrooms and onions. Stir in crackers crumbs. Spoon into a greased 1-1/2 quart baking dish.

Baked, uncovered, at 375 degrees for 15 minutes. Sprinkle with potato chips. Bake 15 minutes longer or until bubbbly and lightly browned.
