Number of Servings: 6

Ingredients

    ground beef, lean (1 pound)
    onions (1 cup chopped)
    1 package of dry ranch-style dressing mix
    1 package of dry taco seasoning mix
    1 cup water
    canned diced tomatoes with green chiles (1 to 2 10 ounce cans)
    pinto beans (2 15.5 ounce cans)
    black beans (1 15.5 ounce can)
    cream-style corn (1 14.5 ounce can)

Directions

Cook the ground beef with the onion in a small skillet. Drain the excess grease and add the ranch-style seasoning mix, taco seasoning mix and the water. Stir in tomatoes with green chiles, pinto beans, black beans and corn. Simmer on stove-top for 20 minutes. More or less tomatoes or green chiles can be added to suit taste. (This is a spicy soup.) Top with low-fat sour cream, low-fat grated cheddar cheese or tortilla chips if desired. Makes 6 bowls.

    Thanks for the comment on my recipe! It's very filling so one bowl usually takes care of ya for awhile! And the beans give you protein and keep you filling full for quiet some time...
