We found this recipe years ago in Taste of Home -- it has been one of my favorites ever since!!! Easy to make, delicious to eat, and great for you! Ingredients

2c. uncooked Penne (I use whole wheat)
1c. Baby Carrots, halved Lengthwise
1 garlic clove, minced
1T Canola Oil
2 cans (14 1/2 oz. each) Stewed Tomatoes
2c. frozen green beans
2t Basil
.5 t oregano
3T Cornstarch (with .25 cup of water)
1T Parsley
Directions
Cook Pasta until tender.
Saute carrots and garlic in oil
Add tomatoes, beans, basil, and oregano. Bring to a boil and simmer until tender
Combine cornstarch and water, add to veggies. Boil for 2 minutes
Stir in Pasta.
Makes 6 1-cup servings.
