Introduction

Number of Servings: 6

Ingredients

    2c. uncooked Penne (I use whole wheat)
    1c. Baby Carrots, halved Lengthwise
    1 garlic clove, minced
    1T Canola Oil
    2 cans (14 1/2 oz. each) Stewed Tomatoes
    2c. frozen green beans
    2t Basil
    .5 t oregano
    3T Cornstarch (with .25 cup of water)
    1T Parsley

Directions

Cook Pasta until tender.
Saute carrots and garlic in oil
Add tomatoes, beans, basil, and oregano. Bring to a boil and simmer until tender
Combine cornstarch and water, add to veggies. Boil for 2 minutes
Stir in Pasta.

Makes 6 1-cup servings.
