Introduction

Ingredients

    24 Oz. Lite Kielbasa, chunked
    28 oz can crushed tomatoes
    32 oz chicken broth
    2 cups water (or more depending on how thick you like your soup)
    1/2 Leek, sliced thinly
    4 Carrots, chopped
    4 stalks of celery, chopped
    2 cups cubed potatoes (I used refridgerated hash browns, the cubed kind)
    2 cups Fresh Spinach, coarsely chopped
    1/2 can dark red kidney beans
    Pinch of oregano, thyme, or whatever spices you like

Directions

Saute leek in bottom of dutch oven. Add kielbasa, and cook until browned. Dump in rest of ingredients and let simmer 45 mins. or until carrots and other veggies are tender. Add more water if needed. Makes 12 servings. Enjoy
